Description: With my husband Jacques we own Gibbston Highgate Estate a boutique estate, established in 1994 and located on the upper terraces of the Gibbston Valley at 380 to 420 altitudes.Vineyard is managed under SWNZ accredited program. Wines are produced from the single estate grapes, with minimal intervention during winemaking. 2011 Soultaker Pinot Noir Vintage - Pinot Noir - Red

Ruby colour, with crimson hues.
Red Cherry and dark Dawson Cherry aromas comingled with some black plums and forest floor undertones and scents.
The palate is underlined by fine grained oak tannins and long finish. It unwinds on opening and brings up rich and sweet fruit.
Dark poultry such as game birds, duck and turkey, but also slow traditional roast chicken.
An elegant companion to lamb and pork, and excellent with salmon.
Ready to enjoy now. Will cellar well for 10 years at least.
From our small, old Gibbston vineyard, with varied soil structure resulting in several harvest parcels from 4 Pinot Noir clones.
Hand tended vines and harvested fruit. Sustainable Winegrowing New Zealand accredited vineyards, winery and bottling/storage plant.
Vertical shoot positioning canopy, hand tended upwards throughout the season. Fruit harvested from mid April to early May 2012 at 24.5 – 26.5 brix ripeness.
Some 10% of whole bunch fruit added to ferment, the rest destemmed and cold macerated before and after the ferment.
Fermented in open-top fermenters, some batches with help of wild/indigenous yeasts, and some with cultured Burgundy yeast.
Spent 12 months in French oak Burgundy barrels.

Bright and elegant with lemon yellow hue.
The wine exhibits a creamy nose with brioche and melon, with lifted jasmine and honey suckle notes.
The palate has good texture, with refreshing and firm acidity. It is well balanced and has an enjoyable splash of lemon and lasting finish. Showing good minerality of Gibbston fruit.
A good match with many foods, excellent with pan fried fish and white meats, as well as strong cheeses and oysters.
Ready to enjoy now but will cellar for well for many years “rounding up” in the process and around its backbone of minerals and acidity.
From single vineyard; our old, awards wining Gibbston vineyard and old vines. One clone only - 100% Mendoza clone on its own roots.
Hand- tended vines, and hand thinned out and hand harvested fruit. Sustainable Winegrowing New Zealand accredited vineyard, winery and bottling plant.
The fruit whole bunch pressed.
All unsettled juice fermented in new and old French barrels by wild yeast. Some 2/3 of wine separated into stainless steel tanks and sitting on lees and undergoing secondary (malolactic) fermentation. Allowed to sit on its lees for a prolonged time with frequent lees stirring. A portion of wine did not go through secondary ferment.
All portions blended, cold stabilized and finished with minimal fining and filtration.
