    Description: A visit to Jarvis Estate is an extraordinary journey into the world of exceptional winemaking. Visitors to the country’s first winery built entirely underground are offered an intimate glimpse into the meticulous steps that go into growing its lush Estate Vineyards that produce world-class Chardonnays, rich Cabernet Sauvignons and velvety Merlots, among others. Touring the 45,000 square foot cave is a unique experience and reveals how the Jarvis Estate approach to crafting world-class wines differs from what is found virtually anywhere else. The tour includes a visit to the Cuve Gallery, a collection of one dozen massive oak vessels assembled in the cave by French coopers and used to make certain the exceptional flavors developed in the estate vineyards are not compromised. The underground waterfall near the end of the tour ensures the steady cave temperatures of 61⁰F and humidity that are vital to the Jarvis Estate signature style of extended aging in new French oak barrels. Guests have the opportunity to enjoy the rewards of these painstaking efforts. The tour concludes with an intimate, seated experience in our Tasting Chamber where visitors will sample six Jarvis Estate and Reserve Collection wines. The Jarvis Cave is fronted by a several acre grassy meadow which was originally designed to be an ecological parking area. Rather than use asphalt, the area was finished with sand to support cars and planted to native grass. Jarvis is family owned and has received its formal designation as Napa Green Certified. The winery is self sufficient in its water consumption by virtue of the two natural lakes on the estate, and all of the winery’s energy needs are met by an extensive solar array that powers every aspect of the winery.

    Every aspect of the winemaking process is underground. Very informational tour. Enjoyed the intimate, sit down tasting of 6 different wines, all of which were excellent. Highly recommend!

    A truly comprehensive tour and tasting experience! The drama of entering the cave is only eclipsed by the phenomenal wines and knowledge of our guide, who was more than able to answer our questions. Incredible estate wines and we were very happy to be able to taste their new release 2012 Finch Hollow Chardonnay. Did not feel rushed and just had a marvelous time.

    A remarkable 100% Cabernet Sauvignon wine that seduces you with its dark crimson color and intense aromas if candied fruit and allspice. Medium tannins gracefully lead you on a journey with many a nuance. Two years in new French Haute Futaie oak barrels adds a dimension of toasty vanilla. After bottling, the wine continued its aging development in the bottle for three years prior to its release, making it perfect for enjoyment now.

    Often known as a blending wine, the Cabernet Franc with its delightful lavender color, tends to be overlooked as the wonderfully food friendly wine that it is. Herb and spice aromas with with soft plum undertones lead you to fresh fruit flavors of blackberry and blueberry.

    Aging almost two years in new French Nevers oak barrels added hints of toasty oak and vanilla to the berry and floral aromas of this wine.

    Our Merlot is 100% Merlot! Each year we set aside a select portion of Merlot to be bottled on its own as a varietal wine, which today has become one of the most sought after Jarvis wines.

    Before bottling, it was aged nearly two years in new French Haute Futaie oak, which allowed the wine to integrate its plum, black cherry and spice flavor characteristics into a wine that is especially food friendly.

    The Finch Hollow Chardonnay is made up of grapes from a very special vineyard called "Finch Hollow". Our winemaker consultant, Dimitri Techlistcheff, noted that it was a distinct terroir which contributed an intense tropical fruit character.

    Year after year we are impressed with the Chardonnay from Finch Hollow. It is barrel fermented in new French oak and sur-lie aged with weekly stirring. The result is a bright, sunshine yellow wine with aromas of coconut and caramel leading to ripe mouth-filling lemon and apple flavors.

    The Jarvis Unfiltered Chardonnay is made from the same barrels of wine as the Finch Hollow Chardonnay.

    Winemaker Ted Henry followed the innovation of consultant Dimitri Techlistcheff in using wine from the top half of the barrels. This is a unique winemaking step that contributes to bottling the wine unfined and unfiltered so as to retain all the subtle flavor elements.

    Aging in new French oak barrels and complete malolactic fermentation produced a most full-bodied chardonnay with rich golden hues and true varietal essence. It has an amazingly long, smooth finish gratifying even to the red wine lover.

    William Jarvis made the mistake of his career in 1993 during midnight pump-overs, when he accidentally pumped a third of a tank of Cabernet Franc into a tank of Cabernet Sauvignon. The experience was devastating, but after the fermentation completed the winemaker, Dimitri Tchelistcheff, who had not had much to say to William since the “accident”, said “this new Bordeaux blend” turned out “not that bad”. In fact, it kept getting better with age! It was enjoyed so much in the tasting room that it became a sold-out product, and this blend has been made every year since. The grapes in the blend come from those vineyards cooled by the breezes off Lake William, hence the name. This wine has gone through extended aging and released when our winemaker felt it was ready for you and your friends to enjoy.

    It’s exciting to imagine that a young boy’s 8th grade science project could turn into a world-class wine, but that’s exactly how this wine began! Many years ago, Will Jarvis, some of the owners, made wine for his 8th grade science project. Because it was an experiment, Will picked only enough grapes to produce one small barrel of wine. After it was bottled and had aged ten years, Will was old enough to taste the wine and happily noted that it’s unique, fruity taste had been preserved through the years.

    Encouraged by his early success, Will repeated his experiment in the Jarvis winery cave environment, again using small barrels. The robust fruit flavor so astounded our winemaker, Dimitri Tchelistcheff, that a new wine was born. With fresh, fruit forward flavor, this wine is intended to be enjoyed at an early age. This wine was cave aged and released when our winemaker determined it was ready to enjoy.

    Dimitri Tchelistcheff, our longtime winemaking and viticulture consultant had a special feeling about the Tempranillo and thought that it would do well in our cool climate vineyards. He suggested planting just one acre of this early ripening grape. In Spanish, the word Tempranillo means “early”. True to it’s name, Tempranillo is the first of our red grapes to ripen and lets us know when it is time to net all of our vineyards against the birds!

    Spending a year in French oak and followed by aging in our cave, it is ready to enjoy now.
